Like any buffet, the old rule also applies at a churrascaria: Save your belly for the good stuff. The waiters will invite you to stop by the salad bar; humor them, but don't load up. The same goes for the skewers of meat that they walk around the restaurant with. They'll tempt you with chicken and fish first, but hold off for the choice cuts.
