Like any good market, São Joaquim has a large meat section. We were all a bit faint after making our first pass through. Here it's possible to buy almost any part of the animal, including brains, eyeballs and tongues. Some of Bahia's traditional dishes use less desirable parts of the animal, a remnant from slaves who were only given whatever was leftover after the animal's choice cuts of meat were sent to be eaten by the slave owner.
